A process for adding fat to an extruded food composition. The process comprises the step of feeding raw material from hopper (1) into cooking or heating extruder (2) to form an extrudate which exists through die (3) into hot oil chamber (9). The extrudate is cut by cutting mechanism (5) located in the chamber (9) into pellet. The pellet is then transported to a screen (6) by which the excess oil is separated from the pellet and blowing air (7) is applied onto the pellet surface. The pellet is then rolled down the screen onto a conveyor belt (8) which carries the finished pellet to a packaging area. The oil in the chamber is heated by heating mechanism (11) and then pumped to the chamber by pump assembly (12).
