Apparatus (1) for continuous tempering of chocolate mass comprising
a cooling stage (2) and a reheating stage (3) arranged thereupon as a vertical tempering column (4). The cooling stage (2) comprises at least two serially connected water chambers (7). A control unit (18) is adapted to control a regulation device (19) in response to measured values of the chocolate temperature.
The regulation device (18) is adapted to regulate the flow of the cooling water which is delivered with a temperature below 18°C. The water chambers (7) comprises a single water channel which at least over the major part of the disc-shaped chamber surface has a continuously progressing course from inlet (10) towards outlet (11).
