The invention relates to a mixture of matter containing 10-80% by weight of at least one amide, 10-80% by weight of at least one salt and 1-80% by weight of at least one polyol, and also the use of this mixture of matter for producing a nitrogen-containing polysaccharide from a polysaccharide, and relates to diverse uses of the products thus produced.
