The invention relates to a machine comprising: a gelling agent supply (45), an acid buffer solution supply (47), a third food supply (51) connected to a food source (53), a mixer (27) connected to the gelling agent and acid buffer solution supplies in order to deliver a mixture of a gelling agent and an acid buffer mixture, and a co-extruder (31) supplied with food (51) and with said mixture, in order to extrude the food in the centre and the mixture on the periphery so as to obtain the desired food product at the outlet.
