The inventive method for producing yeast culture lysates is based on the treatment of yeast substrate by an acoustic field and consists in processing the yeast substrate whose concentration ranges from 5·10 7 to 5·10 5 kl/cm 3 in a chamber (1) by an acoustic field until a cavitation effect whose frequency is equal to or greater than 10 kHz and oscillation intensity ranges from 0.5 to 55.0 W/cm 2 occur for at least 20 minutes and in maintaining the substrate temperature from the freezing point thereof to a temperature equal to or less than 15 °C. Active dried yeast preparations are activated during hydration. The inventive device for producing the yeast culture lysates comprises a dosing unit of an activator (15), a yeast culture aeration unit (16) and a system for supplying and/or discharging a neutral for a working mixture (8) gas. The ultrasound radiators (2), inlet valve (7) and the dosing unit of the activator (15) are mounted on the working lid (13) of the working chamber (1). Said working chamber (1) comprises a cooling apparatus (17) and a thermostatic regulator (18), a movable filter (9) is arranged at the input of a discharge pipe (6) and a locking mechanism (10) is disposed at the output thereof, a compressor (11) is connected to a delivery pipe (3).
