摘要： To produce a coffee extract, roasted and ground coffee is wetted with warm or hot water, and in an extractor it is subjected to a vacuum to remove gases present in the coffee particles and interstitial air. Hot extraction liquid is sucked into the extractor utilizing the vacuum. Thereby expelling of desired flavour components by the introduction of the hot extraction liquid is avoided, and also formation of foam is avoided, which foam would otherwise have disturbed the flow in the extractor.
