The invention relates to a method for limiting and/or controlling the surface temperature of a hob that is heated by an energy source and provided with a temperature limiter, in particular a hob with a ceramic cooking surface. The aim of the invention is to provide a method of the aforementioned type that is versatile and does not exhibit the disadvantages of prior art. To achieve this, the switching temperature of the temperature limiter is adapted to a predetermined switching temperature-time curve during the cooking operation.
