    摘要: PURPOSE: A producing method of functional kimchi using a nano-calcium colloid concentrate is provided to prevent the swelling phenomenon of the kimchi, and to extend the expiration date. CONSTITUTION: A producing method of functional kimchi comprises the following steps: pickling cabbages with salt water; dipping the pickled cabbages into dilution water of a nano-calcium colloid concentrate; preparing seasonings; and mixing the pickled cabbages and the seasonings, and aging. The dilution water of the nano-calcium colloid concentrate is formed by diluting the concentrate by 100~150times.
