Abstract: A preparation method of soybean paste containing Capsella bursa-pastoris, salt made from salted shrimps, and Lespedeza cuneata is provided to enhance the nutritive value and functional properties of soybean paste. A preparation method of soybean paste containing Capsella bursa-pastoris, salt made from salted shrimps, and Lespedeza cuneata comprises the steps of: (a) repeating the process of parboiling Capsella bursa-pastoris in boiling water(100~120°C) and soaking it in cold water(10~15°C) 2~3 times, and dehydrating to obtain soft Capsella bursa-pastoris; (b) heating salted shrimps to evaporate water, and grinding them to obtain salt made from salted shrimps; (c) lyophilizing Lespedeza cuneata by a lyophilizer, and grinding it to obtain Lespedeza cuneata powder; (d) performing the hydrothermal extraction of Lespedeza cuneata with boiling water(100~120°C); (e) boiling soybeans in the Lespedeza cuneata extract; (f) inoculating the boiled soybeans with penicillium; (g) culturing the inoculated soybeans for 3~4 days, and drying them to make fermented soybeans; (h) adding the Lespedeza cuneata extract and the salt made from salted shrimps to the fermented soybeans; (i) firstly aging the fermented soybeans for 40~50 days; (j) separating the firstly aged fermented soybeans into soy sauce and soybeans, and making soybean paste; (k) adding the soft Capsella bursa-pastoris to the soybean paste; (l) secondly aging the soybean paste for 30~40 days; and (m) mixing the Lespedeza cuneata powder to the secondly aged soybean paste.
