Abstract: Unmodified, ungelatinized starch is slurried in water at a solids content between about 10 percent and about 40 percent by weight, elevated to a high temperature under pressure, the temperature being in excess of about 325* F., and while under pressure, the starch is spray-dried to a moisture content less than 15 percent. The resulting product has an extremely highwater solubility generally in excess of 80 percent.
