Abstract: A gas barrier laminate including a gas barrier layer and a sealing layer laminated on a substrate in this order, wherein the gas barrier layer is a layer formed by applying and heat-drying a coating solution containing a water-soluble polymer and at least one of a metal alkoxide represented by a general formula M(OR1)n(where M is a metal element, R1 is an alkyl group, and n is the oxidation number of the metal element) and a hydrolyzate of the metal alkoxide, a content of the water-soluble polymer is 50 wt % or more relative to a total mass of a solid content in the coating solution, a total content of the metal alkoxide and the hydrolyzate thereof is 5 to 50 wt % relative to the total mass of the solid content in the coating solution, and the sealing layer contains an aqueous heat seal varnish.
