    摘要: A gummy starch is prepared by conmbining a starch with a saccharide and subsequently heating up the mixture. The gummy starch consists essentially of a water insoluble part with a chewable property and good dispersibility in oils and fats. A process for preparation of a gummy starch comprises the steps of combining a starch with a saccharide and heating up the mixture at such a temperature for such a time as to cause the saccharide to be caramelized to pick up water insoluble part. A chewable food raw material consists essentially of a gummy starch prepared by combining a starch with a saccharide and subsequently heating up the mixture. An oil and fat dispersant consists essentially of a gummy starch prepared by combining a starch with a saccharide and subsequently heating up the mixture.

    摘要: The invention provides an efficient enzymatic method for the preparation of branched cyclodextrins such as glucosyl and maltosyl cyclodextrins. The inventive method comprises the enzymatic reaction of a branch-splitting enzyme and .beta.-amylase simultaneously with a mixture of a cyclodextrin and starch. Alternatively, a branched cyclodextrin is obtained from a mixture of a cyclodextrin and maltose in an enzymatic reaction with pullulanase, optionally, with admixture of an alcohol such as ethyl and propyl alcohols or a glycol such as ethyleneglycol and propyleneglycol to the reaction mixture. A glucosyl cyclodextrin can be obtained by the steps of first subjecting a mixture of a cyclodextrin and maltose to an enzymatic reaction with pullulanase and then subjecting the reaction product to a second enzymatic reaction in the presence of an enzyme mixture composed of takaamylase and glucoamylase and yeast.

    摘要: Disclosed herein is a method for producing a raw material having foam-forming properties and/or emulsion-forming properties by causing a lipase to act on an oil/fat in a low moisture state; and a product thereof. As disclosed, an oil/fat, or an oil/fat and a carbohydrate, is reacted with a lipase in a low moisture state, that is, in a state in which a moisture content relative to a dry weight of the oil/fat is 4 to 400 [d.b.%] (an added quantity of water is 2 to 200 μL relative to 50 mg of the oil/fat), thereby producing a carbohydrate-oil/fat-lipase reaction product of a precursor material having latent foam-forming properties and emulsion-forming properties, and an alkaline component or material is added to the precursor material having latent foam-forming properties and emulsion-forming properties, and the obtained mixture is foamed, emulsified or powdered, thereby producing a product in which the entire reaction product can be used as a food material. Also disclosed is a carbohydrate-oil/fat-lipase reaction product of a precursor material having latent foam-forming properties and emulsion-forming properties can be produced; and a powdered and stabilized carbohydrate-oil/fat-lipase reaction product having foam-forming properties and/or emulsion-forming properties, and a product in which the entire reaction product can be used as a food material.
