    the shell comprising at least one hydrocolloid,

    a viscosity of less than 10 mPa·s as measured at a temperature of 25° C. and at a shear rate of 10 s−1;
    a specific gravity of between 0.82 and 0.99; and
    a spreading value greater than 850 mm2/10 min.
