摘要: A method for producing a dough sheet having a predetermined width and height from a dough mass of a non-uniform volume, comprising the steps of compressing the mass on a supplying conveyor, detecting any change of width of the compressed dough sheet, driving a delivery conveyor provided downstream of the supplying conveyor at a constant speed, while changing the speed of the supplying conveyor, and, further, stretching the dough sheet on the delivery conveyor, the supplying conveyor being driven based on the data of any detected change in the dough width. Apparatuses are provided to carry out the above method.

摘要: A food extrusion device includes an extruding unit, a rotary unit, a material inlet, and a transfer belt. The rotary wheels at two sides of the extruding unit are arranged inwards or outwards (or outward or inwards) eccentrically and longitudinally. As the rotary wheels at two sides of the extruding unit rotate inwards or outwards (or outwards or inwards) sequentially with a downward sequence so that the dough slides downwards, the dough presents alternative actions of expansion and contraction (or contraction and expansion) with the outwards and inward rotation of the rotary wheels. Therefore, the force applying area of the dough and the stress applied to the dough by the rotary wheels are reduced. As a consequent, elastic dough is made.

摘要: A method and apparatus for producing a sheet of dough, wherein powdered materials, including flour, yeast, sugar, and fats and oils, for making bread, are mixed with particles of ice, such that the particles of ice do not melt, to make them into a dough mixture. The dough mixture is formed into a continuous belt-like dough mixture having a uniform width and thickness such that the particles of ice do not melt, and then the particles of ice are melted to make the belt-like dough mixture hydrated. Finally continuous hydrated belt-like dough mixture is stretched so that a continuous sheet of dough having a gluten network is provided.

摘要: A method is provided for producing bread of a good quality from frozen dough. In this method dough is stretched while being subjected to vibrations so that the dough can be stretched without imparting pressure exceeding the yield point of its elasticity. Thus during the stretching step the gluten network of the dough is unharmed. Further, the dough is rested at least five minutes within a temperature range of 0.degree. C. to 16.degree. C., before it is stretched. Such a dough rested at such a cool condition can be readily stretched, and the stability of the stretched dough is improved over the prior art.

摘要: A method and apparatus for delivering a constant amount of dough per unit time is disclosed. Successive dough blocks (5) are transferred on a first conveyor (8) at times proportional to their weights. The predetermined theoretical traveling distances of the dough blocks and the actual traveling distances of the dough blocks on the first conveyor are compared to find the change of the volume or specific gravity of the dough due to fermentation. Based on the comparison the traveling speed of the first conveyor is changed to obtain a uniform amount of the dough product, and the gap between a second conveyor (11) and a stretching roller (12) may be adjusted to increase the rate at which the dough is produced.
