摘要： A pressure shoe assembly for a skinner includes a back plate that is demountably received within a groove in a mount assembly. Ends of the back plate have extensions presenting an oblique contact surface for engagement of a retention member. The angle of the contact surface secures the back plate I the mount limiting vertical movement of the pressure shoe when in use. The mount assembly includes a ledge for supporting the assembly when removed for cleaning. A lift assist mechanism aids in moving the assembly between the groove and ledge.

摘要： A poultry skinner including a conveyor having ribs aligned to engage the upper surface of a poultry product. A rotatably mounted gripper has a plurality of radially extending fins adapted to engage the lower surface of the poultry passing between the gripper and the conveyor. An arcuate surface is mounted in closely spaced relationship to the arcuate path traveled by the rotating gripper fins and defines an opening for trapping the skin attached to the poultry product. The skin is trapped between the arcuate surface and the outer end of a rotating fin to pull the skin from the poultry product. A rotatably mounted cleaning roller having a plurality of fins is positioned in a close clearance relationship with the gripper. The rapidly rotating fins of the cleaning roller strip the poultry skin from the fins of the gripper and eject it into a collection bin below.

In one exemplary embodiment, the deskinner includes an infeed for the poultry parts, a processing device for removing the skin from the poultry parts, and a discharge for the processed poultry parts. The receptacles are connected to a conveyor-line for transporting the receptacles with the poultry parts to the processing device for removing the skin from the poultry parts. The receptacles are equipped with pressing means for pressing the poultry parts into intimate contact with the processing device.

摘要： A method for trimming an undesirable portion of a metatarsal pad of a chicken paw using a power operated rotary knife. The steps of the method include: a) providing a power operated rotary knife including an annular knife blade rotatable about a central axis and defining a central open area; moving one of the rotary knife and the chicken paw with respect to the other to position the rotary knife with respect to a bottom of the chicken paw such that the undesirable portion of the metatarsal pad is within the central open area of the blade and the cutting edge of the blade is proximate to a periphery of the undesirable portion; and moving one of the rotary knife and the chicken paw such that the cutting edge of the blade slices a layer of the metatarsal pad thereby removing at least part of the undesirable portion.
