Abstract:
An apparatus for cutting a ribbon of food into strips. The apparatus includes a cutting apparatus toward which the ribbon of food is moved at a transport speed in a transport direction which has a grooved shaft and a cutting shaft. The grooved shaft has grooves which encircle the grooved shaft in the transport direction. The grooved shaft takes over the ribbon of food. The cutting shaft has cutting knives which encircle the cutting shaft in the transport direction. The cutting shaft is arranged opposite to the grooved shaft. The ribbon of food is guided between the cutting shaft and the grooved shaft. One respective cutting knife engages slightly into one respective groove disposed opposite thereto to cut the ribbon of food into the strips. The cutting shaft has a length of at least 600 mm. The grooved shaft has a length of at least 600 mm.

A shredder device including a feed hopper, a screw conveyor and a shredder module, wherein the screw conveyor includes a screw conveyor shaft driven by a screw conveyor motor unit and having a screw conveyor flight formed thereon, and the shredder module includes a cutting drum having cutting openings formed therein, and a main screw rotatably arranged in the shredder module and having a main screw shaft, which is driven by a main screw motor unit, and a main screw flight which is formed thereon and passes over the cutting openings. The shredder device enables a higher cutting capacity. The main screw shaft is coaxially enclosed by the screw conveyor shaft inside the feed hopper up to the shredder module.

A device for the longitudinal cutting of a wide food band of a soft food mass which is moved in a conveyance direction on a conveyor belt, wherein a cutting cylinder rotating in the conveyance direction is provided on which is mounted a number of cutting disks disposed coaxially to the rotational axis A for cutting into the food band with the edge thereof, wherein a comb having a plurality of comb tines is provided, which in an operating position engage into the intermediate spaces between the cutting disks during the longitudinal cutting in order to hold down the cut strips on the conveyor belt, wherein the comb is held on a comb holder so as to be pivotable about the rotational axis, wherein the comb holder can be transferred from the operating position and a maintenance position by pivoting about the rotational axis.

A process for producing pumpable foodstuffs, wherein raw foodstuffs such as raw cheese is pre-comminuted, mixed with further ingredients, thermally treated by steam injection, subsequently cooled and creamed or emulsified and then fed or passed to a further working or processing operation. The present invention further relates to an apparatus for producing pumpable foodstuffs, such as processed cheese, having a treatment apparatus for raw foodstuffs, a mixer, a device or unit for heating and subsequently cooling the cheese mass and having feed pumps for the cheese mass.

A method and apparatus for processing cheese comprises charging molten process cheese into a mold consisting of a plurality of cardboard lined, open-ended mold cavities oriented in spaced rows and circulating cooling air between and around each row to effect cooling of the cheese to the desired temperature. The rows of columns are defined by pairs of parallel side panels and crossed partitions formed of a rigid material and defining cavities which are elongate and rectangular in cross section. Support members hold the rows of columns in a parallel, spaced apart relation. After cooling, the mold is elevated, allowing the cheese columns covered by cardboard to be discharged from the lower ends of the mold cavities.

To divide a unit of cheese, such as a wheel or block of cheese, into individual pieces of different sizes and shapes, the unit of cheese is placed on a support surface and is moved relative to a cutting device. The cutting device is made up of a network of knife-like blades each with a cutting edge and the blades are arranged to divide the unit of cheese into the desired shaped pieces. The entire unit of cheese is cut up into the individual pieces in a single cutting operation. In the cutting operation, the unit of cheese is placed on a support part movable relative to the cutting device. The support part is subdivided into surface parts each having a shape corresponding to the shape of one of the individual pieces of cheese. the support part is movably mounted on upwardly extending guide elements. The cutting device is held in a stationary position on the guide elements. The support part and the cutting device are replaceably mounted on the guide elements.

A method is disclosed for treating cheese, preferably cheese offcuts, to form a reconstituted block of cheese. The offcuts are first cut into small chips and then repressed in an evacuated environment to form the reconstituted block of cheese which may then be cut to commercially saleable sizes and packaged.

An apparatus for molding spherical bodies from a semisolid stick wherein said semisolid stick is extruded through a nozzle; a sensing unit disposed in front of said nozzle detects it to thereby send a signal to a cutter; said cutter, upon receiving said signal, is actuated to cut said stick in fixed lengths; the sticks thus cut are received in a rotatable mold; and said rotatable mold allows said cut sticks to travel along the inside of a molding passage which comprises the rotatable mold and a fixed mold disposed opposite thereto.

An apparatus for conveying ground cheese comprising a hopper to receive the ground cheese and having an auger adapted to extrude the cheese through a multiplicity of holes in a die plate. Two sets of rotating blades are located in a housing outwardly of the die plate and act to cut the extruded cheese into a plurality of small particles or plugs. Air is supplied to the lower end of the housing and the cut particles are suspended in the air stream and discharged from the upper end of the housing.
