摘要： A kiln includes a stove, a combustion device, and an exhaust pipe, wherein the stove includes a cavity, an entry, and an air outlet. The cavity includes a front section and a rear section, and a top wall surface of the front section is tilt. The air outlet is disposed between a top of the front section of the cavity and the entry. The combustion device is disposed in the rear section. The combustion device includes at least one burner, a supporting assembly, and an infrared ray generation assembly. The supporting assembly includes a cover plate having a hollow portion. The infrared ray generation assembly is mounted to the supporting assembly and located above the cover plate. The infrared ray generation assembly could be heated by the flames of the burner to generate infrared ray which passes through the hollow portion. The exhaust pipe communicates with the air outlet.

The cavity includes a front section communicating with the entry, a rear section disposed away from the entry, and a middle section disposed between the front section and the rear section. A top wall surface of the front section tilts downwardly toward the entry, and a top wall surface of the rear section tilts downwardly from the middle section toward a direction away from the entry. The air outlet is located between a top of the front section and the entry. The heat source is disposed in the rear section and includes a heating assembly for generating heat. The heating assembly is located at a position higher than a half of a distance between a top and a bottom of the middle section of the cavity.

摘要： An oven for baking batter goods, in particular, a wafer oven, has several baking plates assigned to one another in pairs, and at least one heat source for tempering or heating the baking plates. Particularly efficient production of wafers or similar products can be achieved in that the baking plates are mounted in a wheel-like carrier that can be rotated about an axis so that they extend essentially radially away from the axis, at a distance from it. Furthermore, at least one heat exchanger may be assigned to the baking plates, in each instance, through which a medium tempered by a heat source and supplied by way of a ring line flows.

摘要： A food item is cooked in a cooking device and transferred to a heated holding table by two exit conveyors. The food item then falls onto one of two transfer conveyors that move perpendicularly to the direction of movement of the exit conveyors. The food items travel on the transfer conveyors and then fall onto a main conveyor. The main conveyor moves in a direction that is parallel to the direction of movement of the exit conveyors. If the food item has not been manually removed from the main conveyor after a predetermined amount of time, the food item falls off the main conveyor and into a drawer waste chute for disposal.

摘要： An apparatus and method for measuring the temperature in an oven includes a circuit and software algorithm that reads the voltage across a standard resistive temperature device (RTD) or thermistor to determine temperature measured by the device. Using an unregulated high voltage supply to increase the gain and resolution, it overcomes the problems of small changes in resistance with respect to temperature. An additional input to measure the unregulated supply voltage is used as a reference voltage input. The apparatus includes resistor dividers for both the temperature sensor and reference voltages, a microprocessor having analog inputs, and additional components for noise suppression and open sensor protection.

摘要： A food preparation apparatus including a cooking chamber having a pair of openings in two opposite facing walls thereof. A conveyor extends through the side wall openings in the chamber for conveying a food product through the chamber. First and second pairs of impingement finger ducts are provided for forming a plurality of columnated air jets and for impinging the jets against discreet points of a food product supported on the conveyor. A first one of each of said pairs of finger ducts is disposed above the conveyor and a second one of each of said pairs of finger ducts is disposed below the conveyor. First and second plenums, each of which has a fan respectively associated therewith, supply air to the finger ducts. A single burner is associated with the plenums for simultaneously supplying thermal energy to both plenums. The burner includes a first adjustable baffle for apportioning the thermal energy between the two plenums. The burner includes a second baffle located in the return air stream forwardly of the burner flame to generate a negative pressure zone and draw the flame forwardly, away from the back wall of the burner.
