There is provided a process for obtaining citrus fruit fiber from citrus pulp including a grinding step wherein from 10% to 90% of the total weight of the citrus pulp is ground with a microblade grinder and the remaining weight of the pulp is ground with a stone grinder. There is also provided the ground citrus fruit fiber obtainable by the process of the invention, and foods and beverages including the ground citrus fruit fiber, as well as the use of the fiber for the preparation of foods and beverages.
