The present invention relates to a process for enhancing in situ the flavour of roasted coffee beans comprising the steps of
a) roasting green coffee beans; and
b) cooling the roasted coffee beans by adding a quenching solution to the roasted coffee beans, wherein said quenching solution comprises at least one flavour precursor.
