Abstract:
L' invention concerne un procédé et une installation de refroidissement d'une masse de produit alimentaire contenue dans une enceinte, à l'aide d'un liquide cryogénique injecté au sein de la masse de matière, dans la partie basse de l'enceinte, se caractérisant en ce que l'on dispose de plus, dans la partie haute de l'enceinte, d'un système de convection forcée, permettant ainsi d'utiliser le pouvoir frigorifique des gaz froids résultant de l'injection basse.
