A driven deflecting roller (4) at the outlet end is adapted to drivingly engage the conveyor belt (5). A deflecting roller (3) at the inlet end is also adapted to drivingly engage the conveyor belt (5) and is arranged to move the same synchronously with the deflecting roller (4) at the outlet end. One and the same driving motor (17) is arranged for driving the two deflecting rollers (3, 4) and is connected to drive a driving shaft (18), which is arranged between the inlet end and the outlet end of the deep-frying trough (2) and which is connected to the respective deflecting rollers (3, 4) via a respective angular gear (19, 20).

Via a third collection pipe (24), the lateral inlets (18-20) are connected to the circulation pump (14), such that oil jets having a velocity of flow much exceeding that of the frying oil flowing in the longitudinal direction of the deep-frying pan are directed towards one another essentially transversely of this longitudinal direction.

A method for the production of concentrated, frozen puree, especially potato puree, in which method the potatoes are first washed, peeled, cut into pieces, blanched, cooled and dewatered. The potatoes thus processed are then dried to reduce their weight by 40-60%, whereupon the potatoes are steamed and then mashed, frozen and crushed. By drying the potatoes before they are steamed, a final product of higher quality is obtained, while at the same time chemical additives, such as antioxidants, consistency agents etc., are rendered superfluous.

The present invention relates to a defatting apparatus for reducing the fat content of deep-fried snack products by sucking out excess fat. The defatting apparatus comprises a flow regulating device (1) arranged in the inlet (13) and comprising a throughflow plate (101) which is movably arranged adjacent to the inlet (13) above the conveyor belt (10). The throughflow plate is arranged to regulate the flow of superheated steam toward the products (2) by moving the throughflow plate (101) in the longitudinal direction of the conveyor belt (10) into and out of the inlet (13). Further the invention concerns a method for facilitating supply of deep-fried snack products 2 through an inlet (13) of a defatting apparatus for reducing their fat content by a flow of superheated steam.
