A method and apparatus for the continuous countercurrent treatment of roast and ground coffee particles in which a bed of the coffee particles is suspended in an aqueous liquid and the suspended bed is agitated in a manner which facilitates removal of evolved coffee gases from the bed to thereby effect complete, uniform wetting and/or extraction of the coffee grounds. The apparatus comprises a tank (10) in which water flows upward from the bottom and is removed from the top of the tank, with fresh coffee grounds being fed onto the liquid at the top of the tank. Two pairs of interleaved blade assemblies (24, 25) are mounted in the tank for relatively counter rotation to submerge coffee particles into the aqueous liquid and form a bed of suspended coffee particles. A submerging auger (41), mounted on a central shaft (21) in the tank, facilitates submerging the coffee grounds in the liquid. Both pairs of blade assemblies, which are arranged one above the other, have a set of downwardly extending blade members and an opposed set of upwardly extending blade members interleaved with the downwardly extending blades. One of the sets of blade members in each pair is stationary and the other set of blade members is mounted for rotation on the central shaft. A screw conveyor (47) is mounted on the side of the tank at the base of the suspended bed to remove grounds from the base of the suspended bed and thereby control the height of the bed in the tank. Coffee grounds which settle to the bottom of the tank are removed by suitable means.

To produce a coffee extract, roasted and ground coffee is wetted with warm or hot water, and in an extractor it is subjected to a vacuum to remove gases present in the coffee particles and interstitial air. Hot extraction liquid is sucked into the extractor utilizing the vacuum. Thereby expelling of desired flavour components by the introduction of the hot extraction liquid is avoided, and also formation of foam is avoided, which foam would otherwise have disturbed the flow in the extractor.

A process for preparing an extract from ground, roasted coffee is described. A primary extract is prepared by exhaustive primary extraction with water or an aqueous solution in one or more extraction cells including one cell to which extraction liquid is supplied. A secondary extract is prepared by secondary extraction with water or an aqueous solution in one or more extraction cells including one cell from which secondary extract is drawn off. The process is conducted so that when the primary extraction cell to which the water or the aqueous solution is supplied has been exhaustively extracted, this cell is connected through to the secondary extraction as an extraction cell from which secondary extract is withdrawn, and the first quantity of extract from the cell connected through, which quantity corresponds approximately to the liquid contents of said cell, is supplied to the primary extraction as an extraction liquid.

A method for forming a steamed roast and ground coffee having low off-flavor and desirable acidity is disclosed. A conventional coffee extraction column is heated to a temperature above 212°F and then loaded with roast and ground coffee. Super-heated steam is passed into the column to develop a pressure of about 100 to about 200 psig within the column, and the coffee is steamed for about 2 to about 15 minutes. The steamed coffee is extracted in a conventional manner. The extract from the steamed coffee can be combined with the extract from unsteamed coffee. An advantage of this steaming process is that it creates desirable acidity in soluble coffee extracts without developing undesirable off-flavors.

The devices uses a false bottom in the initial tank to hold the coffee beans and water is pumped between the initial tank and a second tank. Using an inverted P trap in the piping allow for reduced suspended solids in the final product. The end product is a high quality cold brewed beverage that is defined by the beverages clarity and lack of visible suspended solids, wherein the resulting product has a distinct look compared to other brewed beverages (i.e. producing a product that is cleaner than competing products without the need for a filter).
