The invention relates to a device (10) for monitoring a perishable product degradation which is arrangeable near said product and comprises a time measuring module (12) such as a clock and at least one sensor (12) for measuring at least one product intrinsic variable representative for the product storage conditions, such as a temperature, moisture degree, atmosphere composition, a program memory (16) for recording a program displaying a degradation model specific for the monitored product, a processor (18) for calculating, by using a program representing a product time-dependent degradation and the intrinsic variable values measured by the sensor, a data memory for storing the product intrinsic parameters such as the pH and/or texture, and/or water activity, and/or organic acid content, and/or heat transfer factor, and/or content of limiting floras, and/or enzymatic degradation products, and/or redox potential, wherein the evolution of said intrinsic parameters is taken into account in the degradation model in such a way that the degradation calculation carried out by the processor is dependent only on the intrinsic variable and the time.
