摘要： The present disclosure provides an improved method to produce food grade pure carnallite of small crystal-size to be used in blends with the alkaline chlorides to form low-sodium mineral salt compositions of pure chloride basis with improved stability against humidity, wherein the ionic ratios can be adjusted according to the present recommendations. The present salt compositions can be designed and used for the daily consumption for household use and to compensate the mineral shortcomings of the industrial foods. The present disclosure provides also the use of the carnallite blends as a substitute for the phosphates used extensively in the meat industry to bind the structural water in the refined meat products, such as sausages and ham as well as in the bakery products.
