A method of preparing Ganglioside G M3 which comprises converting Ganglioside G D3 into Ganglioside G M3 in an alkaline condition is disclosed. The conversion of Ganglioside G D3 into Ganglioside G M3 is preferably carried out by thermal treating Ganglioside G D3 in an alkaline condition. The thermal treatment is preferably carried out at a pH ranging from 8 to 11 and at a temperature ranging from 30° C to 140° C.

A method of preparing Ganglioside G M3 which comprises converting Ganglioside G D3 included in a raw material containing lipids into Ganglioside G M3 in situ is disclosed. The conversion of Ganglioside G D3 into Ganglioside G M3 is preferably carried out by thermal treating the raw material at a neutral pH zone ranging from 6 to 8 and at a temperature ranging from 60°C to 140°C. The raw material containing lipids preferably contains 10 wt% or more per solids of lipids.

A method of preparing a composition containing a high proportion of Ganglioside which comprises the steps of: (1) adding ethanol to a material containing Ganglioside so as to have a concentration of ethanol of 30 to 70 volume % and recovering the precipitated fraction containing Ganglioside; (2) adding ethanol to the recovered fraction containing Ganglioside so as to have a concentration of ethanol of 70 to 90 volume % and removing the precipitated proteins; and, (3) passing the fraction containing Ganglioside from which the proteins have been removed, through a membrane and recovering the Ganglioside retained on the membrane.
