    摘要: The object of the invention is a fermented flaxseed meal being a raw material for enriching wheat bread with ingredients with health-promoting properties and a method of its production. Water, in which a mono- or disaccharide and lactic fermentation bacteria are dissolved, is added to flaxseed oil cake with a fat content of less than 15%. The ratio of oil cake to water is from 1:1 - 1:4. The amount of saccharide used is 1 - 5% in relation to the oil cake, and the Lactobacillus plantarum bacteria: 10 6 - 10 7 cfu per 100 g of fermented raw material. Fermentation is carried out under controlled conditions at a temperature of 36 - 37°. After fermentation, the oil cake is dried by freeze -drying or in an air flow dryer at a temperature of 50 - 80°C and then comminuted. Fermented flaxseed meal prepared in this way can be used as a substitute for wheat flour in the recipe for bread carried out by the direct method in an amount of 5 - 30%.
