Method for processing a part of a slaughtered animal which comprises at least a meat part connected to a bone and cartilage, the meat part being separated from the bone and cartilage during the processing, which method comprises at least the steps of : • encapsulating a first axial end of the bone together with the cartilage into a encapsulating means; • separating the meat part from the bone and cartilage; and, • releasing the first axial end of the bone and cartilage from the encapsulating means.
