The assembly includes a plate defining a product opening therein, and a texturing unit coupled to the plate and including a plurality of projections extending therefrom into the product opening to form indentations in comestible product positioned in the product opening. The machine also includes a knock-out mechanism adapted to engage comestible product positioned in the product opening in order to dislodge the comestible product from the product opening. The assembly is moveable between a first position, in which comestible product is adapted to be introduced into the product opening from the product hopper, and a second position, in which the knock-out mechanism is adapted to engage the comestible product positioned in the product opening.

The high speed patty forming machine provides patties at a high production speed onto an output conveyor portion. The patty presser includes an upper conveyor having an upper endless belt. The upper conveyor is located above the output conveyor, wherein facing belt surfaces of the upper and lower endless belts define a path between the upper and lower conveyors. The upper conveyor has a tilted section such that a first clearance at an input to the path is equal to or greater than a thickness of the patties and a second clearance at an outlet of the inlet length is less than a thickness of the patties at the input of the path. A shuttle conveyor is arranged at, the output of the path and delivers patties to an indexing packaging machine.

The present invention generally provides as improved meat patty forming apparatus (10) and method of operating the same. More particularly, the present invention provides an improved apparatus and method for forming meat patties using a mold plate (38) having multiple rows or groups of patty forming cavities (40). An existing single row forming machine is modified by moving the fill slot (36) relative to the existing stroke length so that the fill slot (36) comes in contact of fluidly communicates with at least one newly added row of cavities (40). This is most easily achieved by modifying the existing fill plate and by adding cavities to the existing mold plate, so that the combination of modified plates operates with the existing stroke length (which is difficult to change), to produce multiple rows of consistent meat patties.

A mold plate assembly for a patty-forming apparatus includes a reciprocating mold plate (132) having patty-forming cavities (140a, 140b) with at least two rows of cavities aligned in a longitudinal direction, and a fill plate (172) arranged facing the mold plate. The mold plate reciprocates between a cavity fill position and a patty discharge or knock-out position. Fill slots (178) are arranged through the fill plate to fill food product into said mold cavities when the mold plate is in the fill position. According to one embodiment, a valve plate (190) is provided facing the fill plate and having valve openings (216, 218) corresponding to the fill openings of the fill plate. Accordingly to another embodiment, the mold plate assembly includes a fill hole located rearwardly of the cavities. The assembly includes a top fill plate structure (332) arranged facing the mold plate. Outlet slots (335) are arranged through the top fill plate structure to deliver food product into mold cavities when the mold plate is in the fill position.
