A blade assembly is disclosed. The blade assembly includes a mounting ring, at least two elongate cutting blades, and a substantially circular central support positioned substantially at the center of the mounting ring. Each cutting blade may have a proximal end connected to the mounting ring. Each cutting blade may extend from the mounting ring toward a center of the mounting ring. Each cutting blade may be twisted along a length of the cutting blade. A distal end of each cutting blade may be connected to the central support.

A rotary blade assembly for cutting a food product into helical strips is disclosed. The rotary blade assembly includes a substantially spiral-shaped blade holder for mounting in a food product flow path, and a plurality of axially extending slitter blades connected to the blade holder. The blade holder includes an axis of rotation, an upstream surface, an upstream end and a downstream end. The upstream end is axially spaced apart from the downstream end to define a radial slot. A radial cutting edge is positioned adjacent the radial slot. Each slitter blade extends upstream of the upstream surface and includes a slitter cutting edge. At least a portion of the slitter cutting edge of at least one of the slitter blades extends substantially non-perpendicularly to the upstream surface toward or away from the axis of rotation.

A blade assembly includes a blade support frame, and a plurality of V-shaped blades removably fastened to the blade support frame. The blade support frame has a food flow path extending downstream, and a plurality of blade mounts distributed around the food flow path. Each V-shaped blade has a first end portion connected to one of the blade mounts, a second end portion connected to another of the blade mounts, and an intermediate portion extending from the first end portion to the second end portion into the food flow path. At the first and second end portions of each V-shaped blade, a respective one of the blade mounts overlies both the upstream edge and the downstream edge of the V-shaped blade to inhibit the V-shaped blade from rotating when impacted by food.
Abstract:
A system for cutting hasselback food items is disclosed. The system includes a conveyor having an upper surface for supporting at least one food item and for moving the food item along a path, and a cutting device positioned above the conveyor along the path. The cutting device includes an array of four or more parallel side-by-side cutting blades. A method of cutting hasselback food items is also disclosed.
