Abstract: Pregelatinized starches are prepared by pasting an aqueous slurry of a starch which contains at least 50 percent amylopectin at a temperature of at least 300* F, and then rapidly, preferably instantaneously, removing the water therefrom as by roll or spray drying. The resultant products rapidly disperse in water to form smooth pastes which are characterized by low initial viscosity and minimal setback.
