    摘要: A system for delivering a cooking medium of a cooking apparatus includes one or more cooking vessels. The system also includes a drain manifold in fluid communication with the cooking vessel, and a fill manifold having input valves, and output valves in fluid communication with a corresponding cooking vessel. A first flow path is connected to the fill manifold. A filter container selectively is in fluid communication with the fill manifold. A filter pump is positioned between the filter container and the fill manifold and conveys a recycled cooking medium. An overflow pump selectively is in fluid communication with the fill manifold via a second flow path and a portion of the first flow path. The overflow pump conveys a new cooking medium to the fill manifold. The first flow path conveys one of the recycled cooking medium and the new cooking medium to the fill manifold.

    摘要: An automatic cooking medium level control system for a cooking apparatus, e.g., a fryer, may include a cooking vessel having a first temperature sensor at a first level of the cooking vessel and a second temperature sensor at a second level of the cooking vessel. A reservoir holding a cooking medium, such as cooking oil, may be in fluid communication with the cooking vessel. A controller may monitor temperature data from the first and second temperature sensors to determine whether the level of cooking oil in the cooking vessel has lowered. Upon determining that the cooking oil level has lowered, the controller may actuate a supply mechanism, such as a pump, which may be disposed on a fluid communication path between the reservoir and cooking vessel, which may enable the introduction of cooking medium from the reservoir to the to the cooking vessel.

    摘要: An automatic, or “one touch,” filtering system for filtering a cooking medium in a cooking apparatus, e.g., a fryer, includes a cooking vessel, e.g., a frypot; a drain valve disposed on a drain path between the cooking vessel and a filter container; a fill valve disposed on a fill path between the filter container and the cooking vessel; a pump disposed on one of the first path and the second path for conveying the cooking medium from the drain path to the fill path through the filter container; a controller configured to selectively operate the drain valve and the fill valve to regulate a flow of cooking medium to and from the cooking vessel; and a single switch configured to send a control signal to the controller in response to actuating the switch. The systems and methods of the invention provide automatic filtering that may reduce or eliminate incorrect valve operation, so that the filtering process may be performed correctly each time.

    摘要: A cooking system including a vessel having a first end, a second end, and a pair of opposing side walls and containing a cooking medium. A first heat exchanger tube has an outer wall and extends through the vessel from the first end to the second end. The first heat exchanger tube has a first inlet in the first end and a first outlet in the second end. The first heat exchanger tube also includes a combustion gas director tube, a first upper passage, and a first lower passage, wherein the director tube is joined to the first inlet and directs combustion gas into the upper passage and the upper passage is in communication with the lower passage. An upper transition baffle is placed in the first upper passage to smoothly direct combustion gases from the director tube into the first upper passage. Similarly, a communication passage is formed between the first upper passage and the first lower passage, and a lower transition baffle is placed in the communication passage to smoothly direct combustion gases from the first upper passage to the first lower passage. A burner introduces combustion gases into the upper passage through the first inlet, and air enter the upper passage through a gap between the burner and the first inlet to ensure the laminar flow of the combustion gases. A second heat exchanger tube is in contact with one of the opposing side walls outside of the vessel. The second heat exchanger includes a second upper passage and a second lower passage, such that the second lower passage is in communication with the second upper passage. A collection chamber receives the combustion gases from the first lower passage through the first outlet. The collection chamber includes a collection chamber divider which directs the combustion gases into the second lower passage through a second outlet. The combustion gases reenter the collection chamber from the second upper passage through a second inlet.
