The present invention relates to a process for preparing modified potato flakes or modified potato granules, comprising the steps of: a) washing potatoes; b) removing the peel and any impurities where applicable; c) optionally cutting the potatoes up; d) optionally blanching the potatoes; e) optionally cooling the potatoes if step d) is performed; f) cooking the potatoes under steam; g) sieving or pulping the potatoes cooked under steam; h) optionally adding additives other than fibrous materials; and i) drying the pulp obtained, wherein, after step b) and before step i), fibrous materials are added in at least one further step and are mixed substantially homogeneously into a product of the process as present at the time when they are added; modified potato flakes or potato granules prepared in accordance with said process, and their use.

A method of obtaining vegetable proteins and/or peptides is disclosed that includes the steps of: a) preparing a vegetable starting material containing proteins and/or peptides in an aqueous matrix; b) optionally eliminating solid components from said aqueous matrix and/or clarifying said aqueous matrix; c) isolating the proteins and/or peptides from the aqueous matrix by adsorption on at least one ion exchanger membrane made of a synthetic polymer; d) optionally rinsing the ion exchanger membrane in order to remove impurities; e) desorbing the proteins and/or peptides from the ion exchanger membrane with at least one eluent; f) isolating the proteins and/or peptides from the eluent; and g) optionally drying the isolated proteins and/or peptides; and a protein, peptide and/or mixtures thereof prepared in accordance with the method, and uses thereof.

A method of preparing a coagulated plant protein fraction with a medium molecular weight of between 14 to 97, by providing fruit juice in aqueous solution; precipitating a high-molecular-weight plant protein fraction whose bulk has a molecular weight of from above 100 to 600, by adjusting an acidic pH and/or a temperature above room temperature, and mechanically separating the fraction precipitated thus; precipitating a medium-molecular-weight coagulated plant protein fraction under warm conditions by treating, at pH 2 to 7, and between 60 to 90° C., the solution obtained after separation of the high-molecular-weight plant protein fraction and mechanically separating the medium-molecular-weight coagulated plant protein fraction with a molecular weight of between approximately 14 to 97, with the bulk of the molecular weight distribution being between 20 to 60. The plant protein fraction is usable as foodstuff, food additive, additive in pharmaceuticals, animal feed, in cosmetics, as industrial protein, as adhesive.

A method of preparing potato fibres includes the steps of: a) washing potatoes; b) optionally removing solid impurities and rinsing water adhering to the potatoes; c) grinding the potatoes into a pulp; d) separating potato fruit water; e) removing starch and optionally residual potato fruit water in order to obtain raw fibres; f) refining the raw fibres; g) mixing in potato fibres which have previously been dried; and h) drying the fibres; as well as potato fibres obtainable by that method and use thereof.
