    Abstract: Acidified bread dough suitable for preparing sour dough bread may be prepared by incorporating into a dough containing baker''s yeast an effective amount of fumaric acid coated with an edible material. The coating has a melting point temperature higher than normal proofing temperatures but within the range of normal baking temperatures.
