The reagent mixture comprises from 94.0 to 99.9% by weight of the nutrient substances and from 0.1 to 6.0% by weight of the redox indicator.

A system for determining the freshness of a food item comprises an input for receiving a sensed pH level of the food item and a controller for comparing the sensed pH level with reference information which comprises at least a lowest pH level for the food item or expected for the type of food for which the food item is a sample, thereby to determine a level of freshness of the food item. This system enables the freshness of a food item to be determined based on a pH measurement. It is based on the realization that certain food items experience an increase in pH level during the decay process, which starts from a lowest level. The system can be used in the trade, for example to prevent spoiled food reaching the customer, or by consumers. In particular, it does not need complex measurement or analysis.

Procedure and device to estimate organoleptic parameters of tissues of animal origin, i.e. meat allowing to measure toughness, tenderness, or muscle tone for situations where qualification is required. It is based on the measurement of dielectric permittivity in a frequency spectrum and in computing muscle bidirectional electrical anisotropy index (BEAI). The device has a specially designed cell where the muscle sample (2, 7) is placed and is put in contact with the metallic electrodes (8) forming an impedance measurement system (4-6; 9-12) in the frequency range of 0.1 Hz to 10 MHz, and the permittivity (e) value is thus calculated along with the bidirectional electrical anisotropy index. The bidirectional electrical anisotropy index is displayed or communicated to a PC (11) for monitoring and telemetry functions. The advantage of this device over the alternatives suggested in the literature is the insensibility to muscle conductivity changes. The bidirectional electrical anisotropy index then correlates with organoleptic tenderness, as determined by a sensorial evaluation panel.

La presente invención se refiere a un método de extracción y detección de alérgenos de parásitos de pescado en muestras alimentarias para el consumo humano o animal. La extracción se basa en aplicar soluciones con baja fuerza iónica, homogeneización, sonicación y diferentes pH a diversos tipos de pescado ya sean frescos o tratados. La detección se basa en métodos inmunoquímicos mediante el uso de anticuerpos policlonales que permiten detectar proteínas antigénicas del parásito así como anticuerpos policlonales que permiten detectar el alérgeno Ani s 4, que por sus características físico- químicas resiste el tratamiento térmico del alimento. El método es sensible, ya que se puede detectar Ani s 4 en cantidades inferiores a 1 ppm con tasas de recuperación mayores a un 65%. El método descrito es específico ya que no muestra reactividad cruzada con componentes de las distintas matrices ensayadas.
