摘要: La presente invención se refiere a un sistema in vitro de masticación automática de alimentos sólidos y semisólidos destinado a simular el proceso de masticación humana de una muestra de alimento, que comprende un anillo dentado inferior y un anillo dentado superior; y que comprende, además, una palanca de fuerza, formada por un brazo sobre el cual cuelga una masa de plomo, la cual se mueve a lo largo del brazo mediante la tracción ejercida por un motor eléctrico controlado por una tarjeta microcontroladora, que está conectada mediante un husillo al anillo dentado superior; y en donde la acción de cizalla proviene de un motor eléctrico controlado por una tarjeta microprocesador el cual está conectado al eje del anillo dentado superior mediante una cadena. Un segundo objetivo de la invención comprende un método para masticar automáticamente con fuerza controlada y número específico de ciclos de masticación y ángulo de cizalla.

摘要: A chromogenic assay includes a substrate comprising an array of 5 or more dyes which react with volatile organic compounds, wherein the dyes are chromogenic when reacted with volatile organic chemical biomarkers, wherein the volatile organic chemical biomarkers comprise acids, alcohols, aldehydes, alkenes, amines, antioxidants, aromatic compounds, esters, ethylene, lactones, ketones, organosulfur compounds, sulfides, reactive oxygen species, terpenes, or a combination thereof. A method of detecting volatile organic chemical biomarkers includes contacting the chromogenic assay with a sample or sample headspace, wherein the sample or sample headspace is suspected of containing volatile organic chemical biomarkers, and identifying, based on a colorimetric pattern on the chromogenic assay after contacting, the source of the volatile organic chemical biomarkers. Also included are articles and systems including the chromogenic assay.

摘要: A method for detecting boar taint in a fat sample is provided. The method includes extracting boar taint compounds from the fat sample to obtain a boar taint extract which includes indole components and androstenone. The method also includes derivatizing the indole components such that the derivatized indole components have a lower volatility than the indole components. The method also includes desorbing the derivatized indole components and the androstenone by Laser Diode Thermal Desorption (LDTD), and ionizing the desorbed analytes. The content of boar taint compounds in the fat sample can then be determined by subjecting the ionized analytes to mass spectrometry.
