Reference markers are arranged on a fixed plane, with respect to the opposing sides of a food product (45) which is illuminated by lasers (75,85). Cameras (80,90) are arranged relative to the product, for detecting the product's surface profile. A controller co-ordinates the actuation of the laser and cameras, while the food product is conveyed through the fixed plane.
