A system, suitable for high-speed operation, by which raw product (45), such as a slab of meat, can be accurately processed, such as by slicing into segments of desired weight, comprises a product profiling apparatus (15). The product profiling apparatus (15) measures the profile of the physical process. The product profiling apparatus (15) includes line lasers (75, 85) for directing a line of light across the upper and lower surfaces of the product (45) and visual image cameras (80, 90) directed toward the profile surface to capture, at fixed increments, the product profile. The product may also be weighed and the product density determined from the overall profile measurements. A controller (150) receives this data, and instructs the physical process accordingly.

The invention provides a slicing and conveying system (10) that includes a slicing blade (33) that cuts slices from a loaf (32), and an output conveyor (31) located below the slicing blade (33) for receiving the slices in a draft. A control system (62) automatically adjusts a lateral movement of the output conveyor (31) to form a laterally shingled draft of a consistent width in response to a sensed lateral dimension of the loaf (32) being sliced. The control system includes a displacement sensor (70) carried by a laterally adjustable guide assembly adjacent to the slicing blade (33). The displacement sensor (70) is signal-connected to a control (62). The control is signal-connected to the output conveyor (31) to control the lateral movement of the output conveyor according to the lateral dimension of the loaf (32) sensed by the displacement sensor (70). As an additional aspect, the slices can be shingled in the longitudinal direction to form a two dimensional footprint. A length sensor (162) can sense the length of the shingled draft and send a feedback signal to the control (62) to make adjustments to the longitudinal movement of the output conveyor (31) to adjust the degree of longitudinal shingling.

A sealing arrangement is provided for a product weigh scale for a food processing apparatus the weigh scale including a support for supporting a product, a member that carries the support, and a weight sensor that senses vertical load on the member. The sealing arrangement includes a seal surrounding the member beneath the support, the seal having a first sealing surface configured to be sealed against a cabinet, and a second sealing surface. The seal is movable between an inactive position wherein the second sealing surface is out of contact with the support and a sealing position wherein the second sealing surface seals against the support. The seal includes a stationary part having the first sealing surface and a sliding part having the second sealing surface. A plurality of springs urge the sliding part toward the sealing position and a source of pressurized fluid is injected between the sliding part and the stationary part to urge the sliding part toward the inactive position. The pressurized fluid has a sufficient pressure to overcome the urging of the springs and maintains the sliding part in the inactive position during normal operation of the scale, wherein upon loss of the supply of pressurized fluid, the springs cause the sliding part to assume the sealing position.
