The invention relates to an apparatus for applying oscillating magnetic fields, particularly for treating liquid, pasty, semi-solid or granular products. The invention further relates to a method of use of such apparatus and a plant incorporating it. The apparatus comprises at least one pipe (2) of an electrically insulating material for conveying the products (P) to be treated, at least one plurality (4', 4'') of electrodes (7', 7'', 7''', 8', 8'', 8''') around the periphery of the at least one pipe (2) and means (5) for generating one high frequency oscillating electric voltage. Each of the electrodes (7', 7'', 7''', 8', 8'', 8''') has a substantially annular shape, with an inner surface (10) having a minimum radial distance (d) from the outer cylindrical surface (3) of the at least one pipe (2), which is sufficient to prevent electric currents from passing to the product to be treated during operation. The inner surface (10) has at least one substantially conical edge (11') with a predetermined conicity angle (α',α'') to allow use of relatively high voltages with no risk of discharges to air.

Method for treating unpackaged biological liquids, particularly milk or its derivatives, having a microbacterial and spore content, comprising the following operative steps: (a) separating the biological liquid into a fatty fraction having a higher concentration of fatty matter and a non-fatty fraction having a lower concentration of fatty matter compared to the initial concentration; (b) heat treating the non-fatty fraction; (c) cooling the non-fatty fraction to a temperature close to the storage temperature (Tc); (d) preheating the fatty fraction to a predefined temperature (Ts); irradiating the fatty fraction with electromagnetic radiation for a predefined time (tirr); (f) cooling the fatty fraction to a temperature close to the storage temperature (Tc); (g) mixing the individually treated fractions so as to reconstitute said biological liquid. The electromagnetic radiation is in the range of radio-frequencies having frequencies of less than 1 GHz.

A fluid is passed through pores in an electrically insulating membrane. Arranged on the membrane (10a-2,20) are conductive layers (22a, 22b), which are interrupted at the pores. Between the two layers a voltage is applied. The fluid to be treated enters the apparatus by inlet (16) and leaves it by outlet (18). The fluid contains microorganisms or more in general cell material. The voltage is at least so high that a cell wall of the microorganisms is deactivated (for instance perforated) while they flow through the pores.

A method and apparatus for the continuous sterilization of unpackaged biological liquids, particularly milk and its by-products, containing bacterial and sporal loads, includes the steps of: a) gradually preheating the liquid with conventional heating methods to a temperature between 90 DEG and 140 DEG C; b) irradiating the product with an electromagnetic RF field with a frequency of less than 1 GHz, so as to very quickly superheat the product to a temperature between 145 and 165 DEG C and with a thermal gradient between approximately 0.1 DEG C/s and 10 DEG C/s; c) cooling the liquid to a temperature of approximately 15 DEG C before packaging the product.
