Chewing gums containing gum talha and methods of making such gums are disclosed. In one embodiment, the gum comprises about 5 % to about 95 % gum base, about 0.1 % to about 10 % flavoring agent and gum talha, the gum talha being part of the bulking agent in the gum. The gum talha provides the gum with unique properties, and the gum is non-cariogenic. In another embodiments, the gum talha is codried with sweeteners or coevaporated with a plasticizing syrup to produce unique sweetening ingredients and syrups for gum. The gum talha may also be provided in the form of a rolling compound on the gum, or used with sugars or polyols to form a hard coating for a coated pellet gum.

The modified phosphatide is substituted for at least the phosphatidyl ethanolamine that is present in commercially available lecithin oil. The use of modified phosphatides, and in particular, acetylated phosphatidyl ethanolamine, hinders the reaction responsible for the discoloration of the base, thus reducing or eliminating darkening of the gum base over time at elevated temperatures.

A method for providing single units of sugarless chewing gum and compositions so packaged. Individual pieces of chewing gum are provided which units will have a sufficiently long shelf life in order to allow the units to be sold and carried by a consumer even in environments that are detrimental to the stability of chewing gum, e.g., high temperature and humidity. To this end, a piece of chewing gum is provided that is substantially sugar free and that is surrounded by a wrapper, with at least a first portion of the wrapper being sealed to a second portion of the wrapper to create a sealed environment that houses the piece of chewing gum. The wrapper has a moisture vapor permeation rate of less than 0.10 g/100 in2/24 hr at 100 °F, 90 % RH as measured by ASTM method F1249-90. In an embodiment, the wrapper has an oxygen permeability that is less than 0.10 cc/100 in2/24 hr at 1 ATM as measured by ASTM method D3985-81.

A wax-free chewing gum is provided which uses a gum base which is devoid or substantially free of wax. The gum base includes about 20 to about 60 weight percent synthetic elastomer, 0 to about 30 weight percent natural elastomer, about 5 to about 55 weight percent elastomer plasticizer, about 4 to about 40 weight percent filler, about 5 to about 40 weight percent softener, and optional minor amounts of miscellaneous ingredients such as colors, antioxidants, etc. Wax-free chewing gum compositions which contain the wax-free gum base are also provided, which chewing gums further comprise flavoring agents and water-soluble bulk portions. The bulk portions contain controlled release sweeteners at least one of which provides a similar release profile to the release profile of at least one flavoring agent present in the chewing gums.

The coating may be a homogeneous material built up of layers from a single coating syrup containing erythritol, or it may be a coating comprising two or more layers of different compositions, wherein at least one of the layers contains erythritol. The layers may be made from a syrup containing a blend of erythritol and xylitol. The coating is particularly useful in making sugarless gum products.

A process for continuously producing a chewing gum base comprises the steps of continuously adding a hard elastomer, a filler and lubricating agents comprising polyvinyl acetate into a continuous mixer comprising feed inlets and vents, subjecting the elastomer, filler and lubricating agents to a dispersive mixing operation followed by a distributive mixing operation and continuously discharging the resulting chewing gum base from the mixer while the adding and mixing steps are in progress. The polyvinyl acetate is introduced into the continuous mixer at a feed inlet upstream from at least one of the vents so that volatiles from heating the polyvinyl acetate can be removed before they are incorporated into the gum base, negatively affecting the taste of chewing gum made from the gum base.
