摘要: The present invention concerns an efficient process for the preparation of the plant-based substitute of cheese or other diary products and related products and, particularly, for the preparation of plant-origin cheese-types characterized by the presence of mould blooming, for example, Camembert-type, allowing the rapid process completion thus avoiding the long times of preventive fermentation which are the bottleneck in the preparation of this type of plant products (conventionally based on walnut fermentation).
