    摘要: Hood, in particular associable to a cooking oven for professional kitchen applications, comprising a catalytic converter, a fan adapted to extract gases, fumes and vapours from the cooking cavity of said oven, a first intake aperture adapted to enable said gases to flow from the interior of the cooking cavity of said oven into said extractor hood, a third aperture adapted to enable said gases to be exhausted from the interior of said extractor hood into the outside ambient, a channel connecting said intake aperture with said exhaust aperture, and within which there are arranged said catalytic converter and said fan, as well as a condenser for condensing the water vapour and condensable fats contained in the gas flowing through said channel; in said channel there is provided a second intake aperture adapted to take in air from the ambient surrounding the oven. The extraction fan is arranged downstream of the catalytic converter said second intake aperture is located downstream of said catalytic converter and immediately upstream of the fan.

    摘要: Arrangement (2) for automatically measuring the salt concentration in cooking water, comprising: a kettle (1) containing the cooking water, wherein said sensor (2) comprises a toroidal probe (5) that is submerged in the cooking water bath (3) and on an end portion of which there is provided an annular ferromagnetic core (6,6A), round which there are wound two distinct conductive windings (7,8), the respective terminals of which are connected outside; said probe comprises a sensor (11) for the temperature of the cooking water bath (3). The two windings are connected to a processing and control unit (10), which is provided with means for detecting and measuring the voltages across said two windings, measuring the ratio of these two voltages to each other, and processing said ratio so as to produce a value that correlates to the electric conductivity of the cooking water bath (3), wherein the value of the electric conductivity of the cooking water bath (3) is furthermore rectified with the value of the temperature being measured by said temperature sensor (11).
