In said method, the mass of cheese is shaped into a wide cheese bar (1, 11) having a predetermined thickness in a continuous process, the cheese bar (1, 11) is fed to a cutting device by means of a belt conveyor (2) at a certain conveying rate, the cheese bar (1, 11) is first cut into parallel longitudinal strips using longitudinal cutting means (5), and the longitudinal strips that lie parallel next to each other on the belt conveyor (2) are cut into pieces using a transverse cutting means (4) comprising a transverse cutting knife (12) which extends across at least part of the cheese bar (1, 11). The transverse cutting knife, the movement of which is adjustable, is conveyed along with the cheese bar (1, 11) at the conveying rate during the transverse cutting process. The pieces of cheese obtained following the longitudinal and transverse cutting processes remain on the belt conveyor (2) in order to be discharged.

The invention relates to a method for shaping and cooling melted cheese (1) which is initially hot and therefore flowable, and which is applied to a moved metallic cooling strip (3') by means of a supply spout. Individual shaped products (6) are shaped from the melted cheese (1) by a shaping roller (5) which has shaping cavities (7) located in the surface and which impinges on said cooling strip (3'). During shaping, the shaping roller (5) exerts a contact pressure on the cooling strip (3') and this causes the melted cheese (1), which is still hot, to be fully displaced out of the region of the separating dividers (8) that delimit the individual shaping cavities (7) and lie against the cooling strip (3'). The shaped products (6) are released from the shaping cavities (7) and left on the moved cooling strip (3') to cool.
