摘要： The present invention relates to the production of dough and bakery products. More particularly the present invention provides an improved method for preparing an enriched dough and products for use in such methods. The products for enriching a bread or a pastry dough comprise a number of edible particulates, preferably selected from grains, seeds, nuts, dried fruits, spices, herbs, pigments or products derived therefrom, and a number of carbohydrolases, preferably endo-glucanases. Further aspects of the invention relate to a method for preparing the product according to the invention and the use of the product for preparing a bakery product.
