It is intended to provide a means of estimating the secondary processing properties of wheat flour obtained from harvested wheat in the early stage before the maturation of a wheat seed. Namely, a method of estimating the secondary processing properties of a fully matured wheat seed which comprises measuring the expression amount of at least one gene selected from among genes specified by any of the base sequences represented by SEQ ID NOS:1 to 121 in an immature wheat seed.
