L-1-hydroxymethy) alkaneamide derivatives of-L- aspartic acid have been prepared and have been discovered to be non-nutritive sweeteners having favorable chemical and physiological properties for use in compositions ingested orally. The compounds have the general formula wherein R 1 = R 2 = H or CH 3 ; R 3 = H or CH 3 ; and R' = CH 3 , C 2 H 5 , i - C 3 H 7 or t-C 4 H 9 ; except that where R 4 is i-C 3 H or t-C 4 H 9 , R 2 and R 3 are H.
