摘要: An object of the present invention is to provide a method for producing a solid fat having a specific iodine value. Specifically, provided is a method for producing a solid fat comprising the steps of: (1) mixing and melting under heating a lauric fat and a fatty acid having 14 to 22 carbon atoms, where the amount of the fatty acid is 0.5 to 15% by mass relative to the total mass of the lauric fat and the fatty acid; (2) cooling a hot melt obtained by the melting under heating to obtain a crystallization product; (3) fractionating the crystallization product into a solid fraction and a liquid fraction by solid-liquid separation; and (4) removing the fatty acid from the solid fraction to obtain the solid fat.
