The present invention describes an improved pasteurisation protocol for pasteurising microbial cells is disclosed. The protocol has three stages, a first heating stage, a second plateau stage at which the cells are held at a (maximum and) constant temperature, and a third cooling stage. Both the heating and the cooling stages are rapid, with the temperature of the cells passing through 40 to 70°C in no more than 30 minutes in the heating stage. The heating rate is at least 0.5°C/minute and during cooling is at least -0.5°C/minute. The plateau maximum temperature is from 70 to 85°C. By plotting the pasteurisation protocol on a time (t, minutes) versus temperature (T, °C) graph, one obtains a trapezium having an area less than 13,000°C. minute. Not only does this result in a smaller energy input (and so a reduction in costs), but a better quality (and less oxidised) oil results having a peroxide value (POV) of less than 1.5 and an anisidine value (AnV) of less than 1.0.

The present invention relates to a method of preparing a farinaceous dough comprising blending together flour, a pumpable fat composition, water and optionally other bakery ingredients, wherein the pumpable fat compositionhasa low saturated fatty acid (SAFA)content and contains at least 70 wt.% of fat, said fat having a solid fat content at 20 ºC of 12-25% and at 30 ºC of 5-20% and further being characterised by the following fatty acid composition: -26-40 wt.% of SAFA; -= 12 wt.% of C8 -C14 fatty acids; -15-35 wt.% of palmitic acid; -= 5 wt.% of stearic acid; -= 55 wt.% of unsaturated C18 fatty acids; and -= 1.5 wt.% of trans-unsaturated fatty acids; said fat containing 4-20wt.% of triglycerides selected from the group consisting of PPM, PMP, PMM, MPM, PPU, PUP, PUU, UPUand/or 2.5-5.0 wt.% of OPO, wherein P represents palmitic acid, M represents C8 -C14 fatty acid,U represents polyunsaturated C18 fatty acid, O represents oleic acid,and said fat comprising 15-80wt.% of an interesterified fat blend, said fat blendcontaining: -20-80 wt.% of a lauric fat and 80-20 wt.% of palm oil or a fraction thereof; or -50-80 wt.% of a palm stearin and 20-50 wt.% of a low SAFA vegetable oil having a SAFA content of less than 17 wt.%. Die vorliegende Erfindung betrifft ein Verfahren zur Herstellung von mehrfach ungesättigten Fettsäuren in einem Organismus, indem Nukleinsäuren in den Organismus eingebracht werden, die für Polypeptide mit Δ-5-Elongaseaktivität codieren. Vorteilhaft können diese Nukleinsäuresequenzen gegebenenfalls zusammen mit weiteren Nukleinsäuresequenzen, die für Polypeptide der Biosynthese des Fettsäure- oder Lipidstoffwechels codieren, in dem Organismus exprimiert werden. Besonders vorteilhaft sind Nukleinsäuresequenzen, die für eine Δ-6-Desaturase-, eine Δ-5-Desaturase-, Δ-4-Desaturase- und/oder Δ-6-Elongaseaktivität codieren. Vorteilhaft stammen diese Desaturasen und Elongasen aus Thalassiosira, Euglena oder Ostreococcus. Weiterhin betrifft die Erfindung ein Verfahren zur Herstellung von Ölen und/oder Triacylglyceriden mit einem erhöhten Gehalt an langkettigen mehrfach ungesättigten Fettsäuren. Die vorliegende Erfindung betrifft außerdem in einer bevorzugten Ausführungsform ein Verfahren zur Herstellung von ungesättigten ω-3 Fettsäuren sowie ein Verfahren zur Herstellung von Triglyceriden mit einem erhöhten Gehalt an ungesättigten Fettsäuren, besonders von ω-3 Fettsäuren mit mehr als drei Doppelbindungen. Die Erfindung betrifft die Herstellung eines transgenen Organismus bevorzugt einer transgenen Pflanze oder eines transgenen Mikroorganismus mit erhöhtem Gehalt an ungesättigten ω-3-Fettsäuren, Ölen oder Lipiden mit ω-3-Doppelbindungen aufgrund der Expression der im erfindungsgemäßen Verfahren verwendeten Elongasen und Desaturasen vorteilhaft in Verbindung mit ω-3-Desaturasen z.B. einer ω-3-Desaturase aus Pilzen der Familie Pythiaceae wie der Gattung Phytophtora beispielsweise der Gattung und Art Phytophtora infestans oder einer ω-3-Desaturase aus Algen wie der Familie der Prasinophyceae z.B. der Gattung Ostreococcus speziell der Gattung und Art Ostreococcus tauri oder Diatomeen wie der Gattung Thalassiosira speziell der Gattung und Art Thalassiosira pseudonana. Die Erfindung betrifft weiterhin die Nukleinsäuresequenzen, Nukleinsäurekonstrukte, Vektoren und Organismen enthaltend die erfindungsgemäßen Nukleinsäuresequenzen, Vektoren enthaltend die Nukleinsäuresequenzen und/oder die Nukleinsäurekonstrukte sowie transgene Organismen enthalten die vorgenannten Nukleinsäuresequenzen, Nukleinsäurekonstrukte und/oder Vektoren. The present invention describes a method and an automatic system for recovering protein powder meal, crude and pure omega-3 oil and purified distilled water from a mixture of animal tissue processed in a filter-drier-reaction tank. Animal tissue, for example fish, and organic solvent are directly or indirectly fed into the filter-drier-reaction tank. The filter-drier-reaction tank mixes, heats, and separates solid and heavy liquid portions of the mixture, the organic solvents are automatically recycled back in to the system after distillation. The solid portion is retained in the filter-drier-reaction tank and baked. Solid protein powder product (the protein powder meal) is thus recovered.

The method comprises preparing krill, adding protease to the kirll and performing enzyme reaction, extracting eicosapentaenoic acid, docosahexaenoic acid, phospholipids, and astaxanthin from the krill after performing the enzyme reaction, and mixing the extracted eicosapentaenoic acid, docosahexaenoic acid, phospholipids, and astaxanthin. The protease may comprise one or more chosen from serine alkaline proteases and metallo neutral proteases. The serine alkaline proteases may comprise proteases separated from Bacillus licheniformis and the metallo neutral proteases may comprise proteases separated from Bacillus subtillis and Bacillus amyloliquefaciens.
