Methods and systems using a vision system (22) to process shrimp (14). The vision system captures images of samples of shrimps. The processor produces a digital image of the shrimps in the samples. Shrimps exiting a peeler are imaged to determine the number of tail segments in each. The shrimps are classified by the number of intact segments, and quality, yield, and throughput computed from the classification results. The processor can control operational settings of the peeler based on the classification results. In a larger system including other shrimp-processing equipment besides the peeler, other points along the processing path can be imaged by camera or sensed by other sensors to determine processing quality and to make automatic operational adjustments to the equipment.

Mollusc processing apparatus and related methods are disclosed. Molluscs are held in holders by one of their shells, illustratively the bottom shells, and are moved between a series of processing stations. At a shell cut station, an opening is cut into one or both of the shells of each mollusc. The next processing station includes a cutting blade to cut the adductor muscle and viscera of each mollusc away from its non-held shell, illustratively the top shell, and a shell detach mechanism to detach the non-held shell from the held shell. One or multiple air blasts are directed toward the viscera to loosen it from the held shell, and at a vacuum station the loosened viscera is pulled from the held shell. A second muscle cut station includes another cutting blade to cut the adductor muscle from the held shell.

The invention relates to a method which allows identifying shellfish by forming a mark (6) on the carapace or shell of the animal (5) to be identified by means of applying a laser beam (4). By means of this method it is possible to identify crustaceans, mollusks or any other animal provided with a carapace, shell or outer skeleton. A logotype or trademark, an expiry date, capture date, a bar code or any other legend can thus be marked on the surface of the shell or of the carapace of the animal to be identified. Said mark is indelible, resistant to cooking, freezing or washing. The identification by the present method can he carried out on the wet or dry, alive or frozen, fresh or already cooked animal without the quality of the identification mark being altered. This method does not require special inks or additives and can be used to directly mark very rough carapaces or shells as in the case of lobsters, spider crabs or scallops.

A method for preparing shellfish, especially lobsters and crawfish, characterized by the following successive stages: the shellfish is frozen or deep frozen at a temperature of 25 DEG C; the shellfish is cut into two lengthwise; the viscera are extracted in a solid state by perforation in order to separate them from the edible part, whereby care is taken to ensure that the temperature of the shellfish does not rise above 18 DEG C; the viscera which are separated from the edible part are externally removed; and the eviscerated shellfish is stored in a refrigerating chamber at a temperature of - 18 to 25 DEG C.
