    SOLUTION: The anthocyanidin peptide derivative having an antiinflammatory effect refers to a compound in which two molecules of anthocyanidin are combined with phenylalanyl-alanyl-phenylalanyl-valine. Phenylalanine is in the N-terminal position, and valine is in the C-terminal position. The method for producing the anthocyanidin peptide derivative includes the steps of: adding dextrose and lactic acid bacterium to a ground product of black soybean, fermenting the mixture, protecting fermented mash with α-cyclodextrin, digesting the protected mash with protease followed by filtration, treating the resulting filtration residue with cellulase, and extracting the treated residue with ethanol. The anthocyanidin peptide derivative having an antiinflammatory effect is utilized for medicine, cosmetics, daily necessities, and the like.
