PURPOSE: An egg-breaking machine is provided to remove the egg shell before extracting liquid egg only by breaking an egg while rotating the egg. CONSTITUTION: An egg transfer unit(10) transfers individual eggs separately. A cracker generates cracks on the egg shell when the egg is rotated. An extraction unit(50) fixes the transferred egg, and extracts liquid egg from the fixed egg. The rotary unit(30) rotates the extraction unit at a designated radius. A holder guide(70) is mutually intervened with the extraction unit when the extraction unit is rotated, and operates the extraction unit. A liquid egg transfer unit receives and transfers the extracted liquid egg. A cracker(60) generates cracks on the egg shell fixed to the extraction unit. An arm is fixed to the rotary unit and is rotated. A guide body(72) is formed in a circular shape around the center of axis of the rotary unit. A holding interference section(76) is mutually intervened with an operating bar, and rotates a second supporting part. A extraction module(80) catches and holds the egg conveyed to the egg transfer unit, and extends the egg shell by the interference with the holder guide. A first supporting part is fixed to the arm, and supports one side of the egg(1). A second supporting part supports, and fixes the other side of the egg. A link connects and fixes the first and second supporting parts so that the second supporting part is relatively rotated according to the first supporting part. The operating bar is mutually intervened with the holder guide, and provides the operating power to the second supporting part.

A first holder is fixed to the arm, and supports one side of the egg inputted through the egg transfer unit. A second holder(56) is fixed to the arm, and supports the other side of the egg. A holder guide(51) is mutually intervened with at least one of the first and second holders, and controls the pressurization direction in order to fix the inputted egg. A spaced section is mutually intervened with at least one of the first and second holders, and maintains the state of separation. An egg holding section holds the input egg between the first and second holders. A transfer section after holding continuously applies the pressure to at least one of the first and second holders, and transfers the fixed egg. An egg shell separation section removes the pressure applied to at least one of the first and second holders, and separates the first and second holders. A cracker guide(62) is arranged along the rotational direction of the extraction unit.

Egg york is supplied at the uniform thickness onto a concave heating conveyor (1) through a thickness-control regulator (5) and heated until just before egg york burns at 200-300↿C using a gas burner (4) which is located under a caterpillar conveyor. The free egg york oil and the residue which is detached from the surface of conveyor by a teflon scraper (6) at the bottom of conveyor are seperated on a zigzag vibrating screen (7). The residue is further processed using a well-known method to give egg york oil.

Egg albumen powder was manufd. by drying the pure albumen on the 0.9-1.1cm thick iron plate. Thus, the albumen was isolated from yolk and stirred with 10 times waster to precipitate the impurities such as innershell and eggshell. The obtained pure albumen was dried on the 36-39≦̸C iron plate for 22-24hr and 25-35% humidity was maintained to give albumen powder.

본 발명은 유기용매를 배제하여 난황으로부터 인산화단백질을 제조하는 방법에 관한 것으로서, 난황을 물에 희석하는 단계와; 상기 희석된 난황을 원심분리 후, 1차 침전물을 수득하는 단계와; 상기 수득된 1차 침전물을 물에 희석하여 균질화한 후, 다시 원심분리하여 2차 침전물을 수득하는 단계와; 상기 수득된 2차 침전물을 냉동 또는 열처리 시키는 단계와; 상기 온도처리된 2차 침전물에 물을 첨가하여 균질화한 후, 원심분리하여 인지질을 제거하는 단계와; 상기 인지질이 제거된 침전물을 염용액에 녹인 후, 원심분리하여 상층액을 수득하는 단계;및 상기 수득된 상층액의 염을 제거하는 단계를 포함하는 것을 특징으로 하는 유기용매 사용을 배제한 난황 인산화단백질 제조방법에 관한 것이다. 상기의 방법으로 제조된 난황 인산화단백질은 유·무독성 유기용매에 사용하지 않고서도 난황의 인산화단백질을 분획하여 친환경적이고 잔류 유기용매에 의한 독성 위해요소를 극복할 수 있을 뿐 아니라, 난황 인산화단백질의 대량생산이 가능하며 항산화, 항균, 항골다공증, 항고혈압, 항암, 미백 등의 다양한 기능성을 지닌 식품 및 화장품 천연소재로 이용할 수 있다.
